This coffee was produced by Wilton Benitez, a pioneer, innovator and a legend of the Colombian coffee industry. With a background in chemical engineering, Wilton has revolutionised coffee fermentation and processing, most notably through his Thermo Shock method. His ability to control fermentation, drying and milling in state-of-the-art facilities has consistently produced outstanding coffees like this Red Bourbon Decaf, and led to his coffees being some of the most sought after in the world.
The cherries were picked at peak ripeness and then brought to the Granja Paraiso 92 processing facility which is located at the highest point of the property with an incredible view of the Colombian massif.
